ニューヨークの注目エリア「ブッシュウィック」を案内する連載シリーズ「ブッシュウィックへようこそ!」。今回は、暑い季節に飲みたくなるシュワっとおいしい飲み物をご紹介。リカーショップのオーナーが旅先のバスクで出会い、人生をかけるべくスタートしたのは……
7月のとある週末、午後3時。ブッシュウィックの目抜き通りのひとつ、フラッシング・アベニュー沿いにある「ブルックリン・サイダー・ハウス」で日本から来た友人と久しぶりに会うことにしていました。短いとはいえ、ニューヨークの夏は日差しが強く、湿気も高め。こんな日は、とにかくシュワっとしたいわけですが、友人は「お酒」なら何でも行ける口。なので、せっかくならビールではなく、醸造所でつくられたばかりの「アップルサイダー」を飲んでもらいたいと思いました。
私より一足早く到着していた友人は、すでにリンゴの酸味と甘味をバランスよく楽しめる「Kinda Dry」を楽しんでいます。そこで私は、苦みとシャキっとした飲み口がクセになる「Bone Dry」をオーダー。2つのサイダーを飲み比べながら、気分よく涼をとったところで友人がこう言いました。「『アップルサイダー』だって言うから、てっきりジュースかと思ってたんだけど、これ、しっかりお酒なのね」
Three o’clock on a weekend afternoon in July. I was going to meet a friend from Japan at Brooklyn Cider House on Flushing Avenue, one of Bushwick’s main streets. Although New York’s summers are short, the sun’s rays are strong and the humidity is high. On a day like that you want something that fizzles, and my friend liked alcohol of any kind. So, instead of a regular beer, I decided that she should try freshly made apple cider.
My friend had arrived before me and was already enjoying Kinda Dry, which has a nice balance of an apple’s tartness and sweetness. I then ordered Bone Dry, which has a bitterness and a crisp mouthfeel that is addictive. When we had pleasantly cooled off while comparing the two ciders, my friend said, “Since you said ‘apple cider,’ I thought you meant juice. This is definitely alcohol.”
25年間、マンハッタンでリカーショップを経営していたピーターさんがここブルックリン・サイダー・ハウスをオープンさせたのは昨年暮れのこと。もうひとりのオーナー、妹のスーザンさんが語ります。
「ピーターはそれまで年に数回、ワインの買付けでヨーロッパに行っていたの。4年前の春、一緒にスペインに行ったとき、友達が『サイダーを飲もう』って言ってバスク郊外に連れて行ってくれた。でも私はサイダーなんて好きじゃなかったから、何の期待もしなかったの。ところが実際に行ってみたら、そこにはたくさんのサイダーハウスが並んでいて、地元の人は、料理と一緒にサイダーをまるで水のように飲んでいたの。本当に美味しくて、楽しくて、こういう文化があることを初めて知って。この経験が私たちの人生を一変させてしまったわけ」
Peter Yi, who ran a liquor shop in Manhattan for 25 years, opened Brooklyn Cider House here at the end of last year. The other owner, his sister Susan, says, “Peter used to go to Europe several times a year to buy wine. Four years ago when we went to Spain together in the spring, a friend said, ‘Let’s have some cider’ and took us to the outskirts of Basque. Since I didn’t like cider, I didn’t have any expectations. But when we arrived there, we found lots of cider houses all lined up, and the locals drinking cider like water with their food. It was so delicious and fun. I never knew until then that there was such a culture. That was the experience that totally changed our lives.”
そんな兄妹がブッシュウィックに持ち帰ってきてくれたものは「人生を変えたバスクでの経験」そのものでした。
ちなみに、正しくは「アップルサイダー」ではなく、リンゴから作る炭酸のお酒のことをアメリカでは「ハードサイダー」と呼ぶそうで、アルコール度数はワインの半分程度、ビールほどお腹が張らないので肉、魚、チーズ、卵など、どんな料理にも合うと言います。
What the siblings brought back to Bushwick was a true “life-changing Basque experience.”
Actually, it’s not exactly correct to call this “apple cider.” In the United States, this sparkling alcoholic beverage made from apples is called “hard cider.” Its alcoholic content is half that of wine, and since it isn’t as filling as beer, it goes well with meat, fish, cheese, eggs, and practically everything else.
香りを高めるのは、バスク伝統の「サイダー・キャッチング」
さて、その「経験」は店の奥にあるダイニングで体験できます。が、「最初の一杯」を「サイダー・キャッチング」する必要があるため、一旦、店の中ほどにある大きな古い木樽の前まで戻ります。やり方は、手にしたグラスを樽についている小さな蛇口のそばに持って行き、係の人に詮を開けてもらったら、そこから出てくるサイダーをグラスを少しずつ離しながら注いでいくというもの。そして、ちょうどいいところまでサイダーを「キャッチ」できたら「第1回」終了です。
That “experience” can be enjoyed in the dining section at the back. But since the first drink has to be experienced through “cider catching,” you have to return to the center of the establishment to stand in front of a large old barrel. Here’s how it goes: you hold your glass near the small tap on the barrel, the staff will open the tap, and you fill your glass with the cider that flows out while moving your glass down away from the tap a little by little. When just the right amount of cider has been caught, you’ve completed your “first time.”
「お客さんには4品の料理が運ばれてくる間に、これを3回繰り返してもらうの。いろんなサイダーを料理に合わせながら楽しんでもらえるでしょ」
実際サイダーと料理のペアリングを考えながら、ダイニングと樽の間を行き来するのはかなり忙しいのですが、スーザンさんの言う通り、軽やかなサイダーは食事の邪魔にならないどころか、どんどん進んでしまうから不思議です。
“While four courses are being served, the customer does this three times, so they can enjoy various kinds of cider to match the food.” It gets pretty busy going back and forth from the dining room to the barrels while thinking about pairing cider and food, but as Susan says, the light cider doesn’t interfere with the food, but has you wanting more.
ピーターさんはこう言います。
「何でもそうだと思うけど、何かを好きになるにはそれなりに時間がかかるものでしょ。なぜなら、それが何かということをまず理解する必要があるから。でも僕には経験があった。長く酒の仕事をしていたし、ワインをつくったこともある。サイダーの醸造課程がそれに似ていることも知っていた。だからバスクで出会ったサイダーに、僕は、まさかの一目惚れをしてしまったんだ」
Peter says, “It’s probably true about everything, but it takes time to like something. That’s because you first have to understand what it is. But in my case, I had experience. My work for many years involved alcohol, and I even had experience making wine. I also knew that cider was made through a similar fermentation process. That’s why, when I encountered cider in Basque, it was love at first sight.”
サイダーに恋したピーターさんは、バスクから戻ると早速「甘いだけのサイダーが出回るアメリカにはバスク伝統のサイダーづくりに適したリンゴがない」という理由から果樹園を獲得、なんとリンゴづくりを始めます。同時に、醸造所を備えた店舗の確保や改装を進め、その後、収穫、醸造にこぎ着けたのです。
「伝えたいことがあったからね。本物を知らないから、多くの人は『ああ、サイダーね、あまり好きじゃないな』と簡単に拒否してしまうんだ。僕たちは、もっとサイダーという文化を真剣に理解してほしいんだ。だから、ここに店を持った。オープンマインドで自然派志向の人たちが多いから」
Immediately after returning from Basque, the “lovestruck” Peter acquired an orchard because “in the United States, where cider is just sweet, there were no apples suited to making the traditional Basque cider,” and starting growing his own apples. At the same time, he found and renovated an establishment with a brewery. Following this, after harvesting the apples, he began making cider.
“There was a message I wanted to get through. A lot of people, since they don’t know the real thing, would say, ‘Oh, cider. I don’t like it that much,” and simply reject it. We want people to seriously understand the culture of cider. That’s why we opened this store here. This area has a lot of open-minded and natural-minded people.”
たった4年でリンゴを育て、サイダーをつくり、店をオープンさせるなんて、まさに「恋の熱量」のすごさだと思いました。でも恋をすれば「相手のことを正しく理解してもらいたい」と誰もが願うもの。そんな兄を真っ先に、一番近くで理解したスーザンさんも「いまはもうサイダーしか飲まない!」と言い切ります。ぜひ、恋人がいる方はご一緒に、そうでない方は誰とでもかまいません、ブッシュウィックにいながら体験できるバスクのサイダー文化を共有してみませんか?「人生を変える経験」はそう滅多に訪れるものではありませんから、会話は弾み、夜は楽しいままに、どんどん更けていくことをお約束します。
Growing apples, making cider, and opening a restaurant in just four years is nothing less than a feat accomplished in the “frenzy of love.” But when you fall in love, you want people to understand that love. Susan, who was the first to understand what moved her brother, says that she now only drinks cider.
I recommend that you share in this Basque culture while in Bushwick, with your partner or with anyone for that matter. It’s not often that you can have a “life-changing experience.” Look forward to an enjoyable and memorable night full of conversation.
